IN a saucepan mix Grami ragi millet flour with water well so that it is lump free.

Stir the mixture constantly and cook over low heat until it thickens, just like a porridge.

Stir in your milk and cook for another couple of minutes.

Sweeten, if desired with honey or natural Grami Jaggery.

Top as for a very rich fruitcake until all the sponge was covered and place on top shelf of oven Gas ¼; otherwise it is liable to burn.

Savoury Set Ragi Dosa

It is a mixed meal with Ragi used in the preparation, delicious to binge on at lunch or dinner.

Ingredients:

1 cup Grami ragi millet flour

½ cup rice flour

2) ¼ cup split black gram (urad dal) flour

¼ cup finely chopped onions

¼ cup grated carrots

2-3 Green Chilies, finely chopped

Coriander leaves chopped ¼ cup

Salt to taste

Oil for cooking

Instructions:

In a mixing bowl add Grami ragi millet flour, rice flour, urad dal powder(or urad batter), onion, carrot, green chilies,cilantro and salt.

Take a bowl, add toor dal mixture in it, then gradually water and mix nicely till smooth batter forms(similar regular dosa batter).

Take a non stick skillet or dosa pan, greese on it.

Take a ladle of the batter and pour it in circular motion to make smooth dosa.

Pour little oil over the sides and cook until dosa gets golden brown.

Turn the dosa and cook it for a minute.

Serve hot with chutney or sambar for a delicious meal.

Ingredients:

1 cup Grami ragi millet flour

1/2 Grami Jaggery (grated or sweetener of ur choice)

¼ cup ghee

1/4 Cup mixed dry fruits & nuts (almonds, cashews,pistachios)

½ teaspoon cardamom powder

Instructions:

In a pan, dry roast the Grami ragi millet flour until you can smell it from 3 feet away and turns nutty, over low heat while continuously stirring to avoid burning. Reduce heat and base to cool.

Add Grami Jaggery and ghee in katla. Add jaggery and stir until the jaggery melts completely into the ghee.

Roasted ragi flour, chopped nuts and cardamom powder to it. Fold until evenly mixed.

Cool the mixture slightly and warm it to touch. Make ladoos from the mixture.

Store the ladoos in an airtight container and let them cool down completely.
